Vineyards

Roncà, 300 metres above sea level, east-southeast exposure. Veronese pergola and Guyot training systems.

Harvest period

September. The grapes are harvested by hand in 13 kg crates.

Vinification

Soft pressing. Fermentation at a controlled temperature between 15-18°C. Ageing in steel and concrete tanks. Second fermentation in April.

Ageing

No less than 42 months.
Remuage sur pupitre.
